I love these muffins (a little too much)! Although, there’s something about using seasonal fruit in cooking that makes it guilt free – right?

This receipe (from Gorgeous Cakes) is quick and easy, however, be warned, it is hard to not to go back for more!
225g plain flour

2 tsp baking powder

75g golden caster sugar

half tsp sea salt

1 egg

200ml milk

30g unsalted butter, melted

4 plums (appox 180g), stoned and diced

Grated zest of 1 lemon

75g macadamias, coarseley chopped

Icing sugar for decoration



Preheat the oven to 180 degrees centigrade (fan), gas mark 6. Combine the flour, baking powder, sugar and salt in a large bowl. Whisk the egg in another bowl, then whisk in the milk and butter. Pour this over the dry ingredients and stir until just mixed. Fold in the plums and lemon zest.


Set about 10 paper muffin cases into a muffin tray. Spoon the mixture into the cases so they are half full, scatter over the nuts and bake for 17-20 minutes until risen and lightly coloured. Transfer the muffins to a rack and leave to cool to room temperature. Decorate by drizzling some white icing over the top.
